Actually, I don't know if I would call this effect a glitch. I've been 'stable stuffing' a lot and observing things, and I've got an explanation for it being ready with an unready horse.
Horses alone are ready every 3 days to harvest, but the stable is ready every day. So when you put in a horse at 33-34%+ (1 day's worth of horse time) it will be ready.
This is really useful recently with the update that makes animals and trees one click to collect. The one click prevents fast coop and dairy stuffing, but because of the variable harvest times with horse and stable, we're able to stuff it and get multiple foals or consumables/ day!
